Carriages was founded by Tony Killeen, the visionary founder behind allpay Limited. Originally created to bring exceptional food to staff on-site, the restaurant quickly grew into something much more. Its unique location reflects this evolution, while Tony’s lifelong love of trains inspired both the concept and the name celebrating journeys, heritage, and the pleasure of great food shared.

At Carriages, culinary excellence begins with our Executive Chef Nick Briggs, a craftsman whose journey spans Michelin-starred kitchens and collaborations with some of Britain’s most celebrated chefs.

His philosophy is simple: let the finest British produce speak for itself. He creates dishes that are vibrant, balanced, and rooted in tradition, yet always evolving.

For the past two years, he has been the driving force behind our kitchen, bringing his expertise and creativity to every dish.

Huntsham Court

Huntsham Court Farm sits in the heart of the beautiful Wye Valley and is renowned for producing exceptional meat from traditional breeds, including Longhorn cattle, Middle White pigs and Ryeland sheep. Each animal is cared for individually by a dedicated small team, raised and finished slowly to ensure outstanding flavour, texture and overall quality.

1276 Winery

1276 Winery are one of our trusted partners, producing exceptional wine from their 25‑acre vineyard in the rolling hills of Herefordshire. Their work is rooted in sustainability, guided by the Triple Bottom Line principles of People, Planet and Profit. As members of Sustainable Wines of Great Britain, they continually look for innovative ways to reduce their environmental impact, from eco‑friendly packaging to energy‑efficient winery design.
